This very early variety, allowing harvests as early as May, gives beautiful salads with dense apple and long white curly leaves at the heart. The scarole is eaten in salads but also braised or smothered.

Soil tip:

To reduce bitterness, whiten the heart of the scaroles as soon as they reach 30 cm in diameter by binding the leaves 8 to 10 days before harvest.

Culture advice:

1. Sows: Sow under cover from February to May, in a place reserved for sowing with a fine, rich and well-worked land.
2. Transplanting: In April-May, at the 3-4 leaf stage, select the most vigorous plants and plant them in the ground 30 cm away.
3. Harvest: Harvest from May to August. To get your chicory in September-October, sow in the shade in June-July.

The chicory scarole likes the proximity of cauliflower, because this combination will save space and watering.
